Spicy noodles with leeks and shiitake

Ingredients:

  • 400 grams noodles
  • 2 spoons of oil
  • 2 cloves of garlic, finely chopped
  • 2 cm fresh ginger root, peeled and chopped.
  • 1 red chilli pepper, seeds removed if necessary
  • 300 grams sliced leek
  • 200 grams shiitake
  • 1 red bell pepper, in thin strips
  • 3 to 4 spoons of soya sauce or ketjap
  • 1 tablespoon lime juice
  • 40 grams salted cashew nuts
  • handful of coriander, coarsely chopped

Preparation:

  • Prepare the noodles according to the instructions.
  • Drain the noodles and rinse them under cold running water.
  • Drain them well in a colander.
  • Heat the oil in a frying pan or wok and stir fry the garlic, ginger, chilli pepper and leek for 5 minutes (if you like it spicy, fry the seeds from the red pepper).
  • Add the shiitake and bell bell pepper and stir-fry everything for about 3 minutes.
  • Mix in the soy sauce and lime juice and stir for a further 1 minute.
  • Sprinkle with cashew nuts and coriander.
  • Season with soy sauce at the table if necessary.
  • Delicious with cassava crackers.
