Prepare the noodles according to the instructions.
Drain the noodles and rinse them under cold running water.
Drain them well in a colander.
Heat the oil in a frying pan or wok and stir fry the garlic, ginger, chilli pepper and leek for 5 minutes (if you like it spicy, fry the seeds from the red pepper).
Add the shiitake and bell bell pepper and stir-fry everything for about 3 minutes.
Mix in the soy sauce and lime juice and stir for a further 1 minute.
