Stir-fry noodles with shii-take and broccoli

Ingredients:

  • 500 grams broccoli
  • 300 grams stir-fry noodles
  • 3 spoons of wok oil
  • 2 onions, chopped
  • 2 garlic cloves, chopped
  • 2 cm gingerroot, finely chopped
  • 400 grams chicken breast, in tiny pieces
  • 200 grams shiitake, in slices
  • 1 tablespoon of soy sauce
  • 2 tablespoons dry sherry
  • 2 spring onions, in thin rings

Preparation:

  • Clean the broccoli and separate it into small florets.
  • Slice the thin steel stems that remain and keep them aside.
  • Prepare the noodles according to the instructions on the package. 
  • Heat the oil in a wok and stir-fry the onions with the garlic, the gingerroot and the broccoli slices for 3 min. while stirring over high heat.
  • Add the chicken and fry until brown over a high heat, stirring frequently.
  • Add the broccoli florets and mushrooms and stir-fry until the broccoli is al dente.
  • Stir in the drained noodles, soy sauce, sherry, spring onion and salt and pepper to taste.
  • Stir-fry until the dish is thoroughly warm.
