Ingredients:
- 500 grams broccoli
- 300 grams stir-fry noodles
- 3 spoons of wok oil
- 2 onions, chopped
- 2 garlic cloves, chopped
- 2 cm gingerroot, finely chopped
- 400 grams chicken breast, in tiny pieces
- 200 grams shiitake, in slices
- 1 tablespoon of soy sauce
- 2 tablespoons dry sherry
- 2 spring onions, in thin rings
Preparation:
- Clean the broccoli and separate it into small florets.
- Slice the thin steel stems that remain and keep them aside.
- Prepare the noodles according to the instructions on the package.
- Heat the oil in a wok and stir-fry the onions with the garlic, the gingerroot and the broccoli slices for 3 min. while stirring over high heat.
- Add the chicken and fry until brown over a high heat, stirring frequently.
- Add the broccoli florets and mushrooms and stir-fry until the broccoli is al dente.
- Stir in the drained noodles, soy sauce, sherry, spring onion and salt and pepper to taste.
- Stir-fry until the dish is thoroughly warm.
