Crepes with shii-take

Ingredients:

  • 2,5 dl milk
  • 80 gram flour
  • 1 egg 
  • 3 tablespoons sunflower oil
  • 50 grams of butter 
  • 2 garlic cloves
  • 200 grams shiitake
  • 20 sprigs chives
  • salt
  • freshly milled pepper

Preparation method:

  • Mix the milk with the flour, the egg and the sunflower oil.
  • Melt 25 grams of butter and stir into the batter.
  • Let the batter rest for at least 30 minutes, covered.
  • Peel and slice the garlic.
  • Wipe the shiitake clean and cut into slices.
  • Wash and finely chop the chives.
  • Heat some butter in a small skillet and fry 1/4 of the shii take and of the garlic for about 2 minutes.
  • Pour a thin layer of batter over the shii take and garlic and sprinkle some chives on top.
  • Sprinkle with salt and pepper and fry the pancake until cooked on both sides.
  • Fold the pancake in half twice.
  • Keep the pancake warm under aluminum foil.
  • Fry 3 more crepes in this way.
